How to make the most of vegetables

It is recommended that we eat at least five pieces of fruit or vegetables each day but it is not always easy to eat plenty of vegetables. Below are ten of my favourite vegetables and the ways that they can be prepared:


Asparagus can be fried in oil with a bit of pepper and lime juice. It can also be boiled.


Avocado can be chopped up and with lemon juice into used mixed with pieces of chicken and mayo. It can also blended into guacamole.


Carrots can be eaten raw. They can also be boiled or steamed and added to a plate of food.


Cucumbers can be chopped into discs and added to sandwiches. It is also superb in salads.


Lettuce are best in salads. They are not as easily suited to being cooked.


Mange tout can be boiled in water and then fried in a little bit of oil


Onions can be chopped and added to many different dishes. They can also be caramelised with some cream.


Potatoes are probably the most versatile vegetable. They can be mashed, fried, boiled, sauteed,


Pumpkins can be boiled but they are most suited to being cooked into a pumpkin pie.


Spinach is best steamed. It can also be sauteed and can be eaten raw in salad.
